The Recipe
Emily had some thoughts on cheese and crackers, so today, we’re bringing them to you and including her recipe for Creamed Roquefort Cheese.

Cheese and Crackers
Practically everybody knows how good cheese served with crackers is after a meal. Comparatively few, however, know that cheese is even better on bread. Especially is this true if the bread is of the type baked in Europe and if butter is served with the cheese. Neither do many realize how good cheese tastes when eaten on fresh pears and apples. Try serving Camembert, Brie, or Liederkranz with a pear or an apple to each person for dessert.
All cheeses except cottage and cream cheese should be removed from the refrigerator 3 to 4 hours before they are to be eaten. This is especially true with the soft Camembert-type cheeses, which are perfect at room temperature, soft and with no dry chalklike center. An English aged Stilton is never even put into the refrigerator, but is left on the sideboard covered with a napkin. A few drops of port or sherry are thrown into cheese every day or so.
One cheese deserves special mention. Liederkranx was developed in this country and is still produced only here. It can be found in almost any store, even in small villages. It is practically always in good condition, and regularly better than the French Brie or Camembert, except when those are precisely at the height of their perfection.
Creamed Roquefort Cheese

Ingredients
1/2 cup unsalted butter
2 cups Roquefort cheese
1 tbs. Worcestershire sauce
3 drops Tabasco
1 tbs. heavy cream
Directions
Cream 1/2 cup unsalted butter, or wash the salt from ordinary butter and use it. [This was new to us!] Add and mix in 2 cups Roquefort cheese, 1 tbs. Worcestershire sauce, 3 drops Tabasco, and 1 tbs. heavy cream.

Ahhhh, the belt with the swimming trunks. Gotta love it. Do you think today’s salted butter can be made unsalted with just a rinse? I wonder if the salted butter back then was more of a coating than mixed in.
