The Tip
With mud season approaching we thought this quick tip would be welcomed.
It’s best to wipe your feet before you enter someone’s home. If there is no welcome mat do your best to tap off any potential dirt before walking in. If your shoes or boots are indeed muddy, ask if you may remove your shoes first before coming in. “My shoes are pretty muddy, do you mind if I take them off before coming in?”
The Recipe
We Posts are fans of deviled eggs (Susan Senning’s being a particular favorite at gatherings) and we’re also fans of clams - raw, casino, with spaghetti, in chowder, we dig ‘em. (Had to, it was right there.) So we had to check out Emily’s Deviled Clams.
Emily Post’s Cookbook, 1951, pg. 38
Deviled Clams
Time: 40 minutes
Serves: 4
Ingredients
1 pt. hard clams, opened
1/2 cup cream
2 tbs. butter
2 tbs. flour
1 tbs. each minced green pepper and parsley
1 tbs. lemon juice
1/2 tsp. Worcestershire sauce
1/2 cup fine buttered bread crumbs
Directions
Put clams through meat chopper with medium, cutter. Strain off 1/2 to 3/4 cup of juice and combine it with the 1/2 cup of cream.
Melt the butter, add flour, and stir until smooth. Add gradually the cream, combined with the clam broth, and stir while cooking until thick and smooth.
Add seasonings and minced clams. Fill greased scallop shells or shallow ramekins and top with buttered crumbs. Bake in a moderately hot love, 375℉., for 20 minutes, or until well browned.
