The Tip
At a wedding, it’s important for the happy couple to greet each of their guests and thank them for attending. This is an etiquette mark not to be missed. Whether you use a cocktail hour with very intentional mingling, a receiving line as guests enter the reception, or visit table to table during a meal is up to and will vary depending on the wedding. Regardless of which you choose, ensuring you’ve connected with each guest will honor the intention of the invitation you extended.
The Recipe
This creamy, pink side dish makes for a beautiful addition to any table.
Emily Post’s Cookbook, 1951, pg. 171
Sauce For Beets
Time: 15 minutes
Serves: 4 to 6
Ingredients
[2 bunches boiled, peeled, and sliced beets, reserve the water the beets were boiled in]
3 tbs. butter
3 tbs. flour
1 cup hot liquid (water beets were cooked in plus enough water to make 1 cup)
3 tbs. vinegar
4 tbs. cream
2 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
pinch cayenne
[OPTIONAL: Substitute the cream with 4 tbs. sour cream and reduce vinegar to 2 tbs.]
Directions
Make a cream sauce out of the butter, flour, and beet liquid. Stir in vinegar, cream, sugar, and seasonings in that order. If sour cream is available, use it instead of fresh cream and reduce vinegar to 2 tbs.
Stir in 2 bunches of boiled peeled and sliced beets.
