The Tip
For most informal gatherings at home, as the host, offer to help guests with their coats, hats, and/or bags as you welcome them into your home. “Judy! Thank you for coming! May I help you with your coat?” If Judy replies with a “Yes, please. And thank you.” help her with her coat and either hang the coat on a rack, in the nearest closet or let Judy know she can head into the party while you store her coat in the guest room (or wherever coats are being kept if the entry does not have enough space.) If Judy replies, “No, thank you, I’ve got it.” You can either let her know where to store her coat, or again, offer to take it there for her. “Great, the coat closet is just there.” or “Great, once you’re set, please head on into the party and I’ll put your coat in the guest room with the others.”
The Recipe
Emily Post’s Cookbook, 1951, pg. 170
Boston Baked Beans
Time: 20 hours [yes, you read that right]
Serves: 4
Ingredients
1 pt. dried beans
2 medium onions, chopped
3 tbs. catsup
1 tbs. dry mustard
1 tbs. salt
1/2 lb. salt pork
2 tbs. dark molasses
Directions
Soak the beans in water overnight. Drain water off and put beans in a kettle; cover them with water. Bring to a boil and let simmer 1 hour. Drain off water.
Mix the onions, catsup, mustard, and salt into the beans and put all into a bean pot. Cut the pork into pieces about 1 1/2 inches long by 1/2 inch wide and 1/4 inch thick. Lay these over the top of the beans, add the molasses, add hot water to just cover the beans, and put the lid on the pot. Bake in a 250℉. oven for 7 or 8 hours, uncover, and bake 1 hour more. Examine beans once or twice during the baking and add water to cover them if necessary.
