Your etiquette tip, quote and an Emily Post Cookbook recipe to start your weekend off right!
The Tip
Mixing methods when inviting people to parties can be a really great way to both convey the formality of a formal event (or just celebrate the awesomeness of a printed or handwritten invitation) as well as get the usefulness out of digital communication. You might send out a paper invitation eight or more weeks before your party (especially if it’s the holidays.) Then for guests who RSVP yes, send out something like: “Can’t wait to see you for our Leftovers Party Saturday, November 25th. Bring the last of your feast and we’ll see you at 5:30 pm!” on a piece of cute digital stationery. This serves as a reminder that someone can easily add to their phone’s calendar.
The Recipe
Emily’s Meat Jelly is the real deal. She notes that it makes a quart of strong jelly.

Meat Jelly
This is an old French recipe.
Time: 6+ hours
Makes: 1 qt. of delicious strong jelly
Ingredients
3 lbs. lean beef
1 lb. beef bones
1 calf’s foot
3 bay leaves
6 shallots, chopped
3 medium onions, sliced
1 bunch parsley
12 tarragon leaves
1 tbs. thyme
3 carrots, sliced
1 parsnip, cut in pieces
3 leeks (cut off most of green)
1 tbs. salt
12 peppercorns
2 egg whites [partially beaten] and shells [crushed]
Directions
Put all these items in a soup kettle, cover with 3 or 4 qts. of water, bring to a boil, lower flame, and let simmer 6 or 7 hours. Pour through a colander and let get cold. Remove all the fat from the surface.
Return to the fire and boil until there is only 1 qt. of liquid left.
Let liquid cool, add the crushed egg shells and the partly beaten whites. Return to fire and stir constantly till it boils up. Remove it from the fire and strain through 2 thicknesses of cheesecloth.
