The Tip
A comfortable distance to stand apart from someone else when speaking with them is about 18 inches or half a meter. Any more and people tend to want to raise their voices to be heard, and any closer starts to feel too intimate and uncomfortable.
The Recipe
Being Vermonters, we’re partial to using Cabot Seriously Sharp cheddar for this recipe.
Alpine Eggs
pg 269 of The Emily Post Cookbook, 1951
Time: 30 minutes
Serves: 4
Ingredients
4 eggs
⅓ lb. (5 or 6 oz.) cheese
4 tbs. butter
1 tbs. chopped parsley
pepper and salt
Directions
Cut half the cheese in thin slices and line a well-buttered baking pan with them. Break the eggs over the cheese carefully so as not to break the yolks.
Season with salt and pepper and cover with the rest of the cheese grated and mixed with the parsley. Dot with the rest of the butter. Place in a 350° to 375° F. oven for 10 to 12 minutes or until the eggs are set.
