The Tip
Forgetting names happens to the best of us. Rather than try to skirt around it, it’s often easiest to just admit what’s going on. “I’m so sorry, I’m blanking on your name even though I do know it. Would you remind me, please?” Of course, say thank you when the other person then gives you their name. “George, right, thank you and again I’m sorry.” And then don’t dwell on the mistake.
The Recipe
Who doesn’t love a thick cheesy sauce that can be used in many ways? Knowing Emily’s love for rich and creamy dishes we’re sure she enjoyed this dish many times.
Emily Post’s Cookbook, 1951, pg. 238
Cheese Sauce for Baking Vegetables or Macaroni
Time: 15 minutes
Serves: 2 1/2 cups
Ingredients
4 tbs. butter
4 tbs. flour
1 3/4 cups milk
1/2 tsp. salt
1/8 tsp. pepper
1 cup grated cheese
Directions
Melt the butter in a double boiler, blend in the flour, add the milk, salt, and pepper, stirring constantly. Continue stirring and cooking till the sauce thickens. Add the cheese and stir till it has melted and is mixed into the sauce.
NOTE: This sauce can be used on almost any boiled vegetable or macaroni. Put vegetables mixed with sauce in a butter baking dish, cover with crumbs and more grated cheese, then bake in a 375℉. oven til the top is golden brown. When used to make macaroni, an extra 1/2 to 3/4 of a cup of grated cheese should be scattered through the dish when the macaroni is being put in.
