The Tip
When knocking on someone’s door, a friendly knock with a slight rhythm (knock-knock, knock-knock, knock.) is preferable to a hard or repeated knock (KNOCK, KNOCK, KNOCK!).
The Recipe
Emily’s notes say this is a “great breakfast dish” and we believe it!
Kedgeree
pg 45 of The Emily Post Cookbook, 1951
Time: 10-12 minutes
Serves: 2
Ingredients
1 can salmon or tuna (but if tuna, drain off all oil)
3 tbs. butter
1 cup cooked rice
2 hard-boiled eggs
Directions
Melt butter in saucepan, add carefully flaked fish and rice, move fish and rice around slowly so as not to break up the fish flakes. After a minute or so add eggs cut up into pieces and continue moving around until heated.
