The Saturday Sip: March 25, 2023
Your etiquette tip, quote and an Emily Post Cookbook recipe to start your weekend off right!
The Tip
A bread and butter note is also the same as a thank-you note but it’s specifically for having stayed as someone’s houseguest. Comment on the stay and what a wonderful time you had. This note is sent after the trip. Or, you might leave it for your host, on the kitchen table, or somewhere it will be seen. If you didn’t bring a hosting gift or take your host out to dinner while staying with them, you can send a thank-you gift along with your thank-you note.
The Recipe
This Louisiana take on a corn-based side dish caught our eye this week.
Emily Post’s Cookbook, 1951, pg. 182 & 183
Louisiana Baked Corn
Time: 1 1/2 hours
Serves: 4
Ingredients
6 ears of corn
1 small onion
1 green pepper
3 tbs. butter
3 tbs. flour
2 cups milk
1 cup grated cheese
salt and pepper
1 tsp sugar
2 eggs
bread crumbs [+/- 3/4 cup]
grated cheese [+/_ 1 cup]
butter [+/- 2 tbsp.]
Directions
Scrape corn off the ears.
Chop the onion and the green pepper and cook them in the butter until soft but not brown.
Stir in flour and then the milk, making a thin white sauce.
Stir in the cheese, salt and pepper, and sugar. Then stir in approximately 2 cups of the corn which has been scraped off the ears.
Beat the eggs and stir them into the corn.
Put all into a baking dish, cover with bread crumbs and grated cheese. Dot with butter. Put into a 325℉. oven to bake for from 3/4 to 1 hour. [that is some wording there Em!]
