The Tip
When inviting someone to your home for the first time, as the host, it’s smart to ask about allergies and mention any pets you have so that folks with strong allergies - or even just those who are nervous around certain animals - can prepare, or let you know that a visit might not be possible. As the host, inquiring about a guest’s allergies and giving a heads up about pets is part of inviting guests well.
The Recipe
It’s time for cake. Cake with chocolate frosting. Emily’s got us covered, so let’s get baking!

Sponge Cake
In this old but excellent recipe, the quantities of sugar and flour are given by weight. If you have no scales and if the eggs are average size, use about 1 1/5 cups of sugar and 1 1/5 cups of flour with the 6 eggs.
Time: 1 hour, 20 minutes (not counting cooling time)
Serves: 1 large cake
Ingredients
6 eggs
sugar, same amount as the eggs by weight [1 1/5 cups]
flour, 1/2 the weight of the eggs [1 1/5 cups]
1 lemon
Directions
Beat egg yolks in a bowl till light yellow. Then slowly add the sugar while continuing to beat. Add the juice of the lemon together with the grated yellow part of the rind [zest]. Now fold in the flour little by little, alternately with the stiffly beaten egg whites.
This is best baked in an ungreased tube pan in a 325℉. oven for approximately 1 hour or until a straw inserted into the cake comes out clean. When done, turn pan upside-down and let cake cool in it, which will take about 1 hour.
Chocolate Frosting I
Ingredients
2 squares chocolate
1 tbs. butter
1 to 1 1/4 cups confectioners’ sugar
3 tbs. water
1 tsp. vanilla
Directions
Put all together in a double boiler over boiling water, but after having mixed thoroughly, remove from fire. If too thick, then thin with more butter, not water.
