The Tip
Casual Group Introductions — When introducing one person to a large group, we have to remember it can be intimidating and tough to remember a lot of names all at once if you’re the newbie to the group. Ten names thrown at you quickly to get introductions over with doesn’t always result in a smooth and comfortable entrance. One great way to handle this is for you to say, “Hey everybody, this is Kavia, Kavia this is our host/the organizer/the team’s captain, Ellen. I’ll introduce you to everyone else as we go around.” This allows Kavia a chance to meet the host, group organizer, or an important person (like a captain) first and then focus on subsequent introductions.
The Recipes
An American classic, let’s take a look at Emily’s version of a Hamburger De Luxe.
Emily Post’s Cookbook, 1951, pg. 79
Hamburger De Luxe
Time: 50 minutes to 1 hour (not counting the 1/2 hour in the refrigerator)
Serves: 6
Ingredients
1 3/4 lbs. ground round steak
2 tbs. butter
1 medium onion, chopped
2 tbs. chopped parsley
1 cup bread crumbs
2 eggs beaten with 2 tbs. cream
salt and pepper
2 tbs. glacé de viande (concentrated meat jelly) or 2 tsp. meat extract
4 cups hot Creole Sauce
Directions
Lightly brown onion in the butter, then mix thoroughly but lightly with the meat and the other ingredients [“Ground round steak” through “salt and pepper”.] Form into 6 large or 12 small round hamburgers and put in the refrigerator for at least 1/2 hour.
Put a small piece of the glacé de viande, about 3/4 of a tsp., on each hamburger and push it in a bit so the jelly won’t fall off. Arrange the hamburgers on the bottom of a large Pyrex roasting pan with a cover. Try to get them all in a single layer. Pour the hot Creole Sauce around and over the hamburgers, cover, and place in a 375℉. oven. Cook for 35 minutes if you have made the small hamburgers or 40 to 45 minutes for the large ones.
