The Tip
Do not take or place a call when dining with others. If there is a potential emergency, like if your child is home sick with a babysitter, or a relative is in the hospital and you are awaiting a call, then let your fellow dining companions know that you might have to take a call and then put your phone on vibrate and leave it in your pocket, rather than out on the table. Work calls might feel like emergencies and in some cases they might even be, but be truthful with yourself and others about whether or not you really need to be available during the meal.
The Recipes
We’ve been hit with a little heat wave here in Vermont, to help us cool off, we’re turning to iced beverages á la Emily!

Iced Tea
Prepare as for hot tea but use 1 1/2 heaping tsp. of tea leaves to each cup of water. Most people pour the hot tea directly into glasses filled with ice. If you prefer your tea stronger, allow it to cool slowly to room temperature, then chill it in a refrigerator and serve in glasses filled with cracked ice.
Serve with lemon and sugar. Iced tea is good when 1 tsp. lemon juice is added per glass and each glass is embellished with a sprig of fresh mint.

Iced Coffee
Use twice as much coffee as you do for regular coffee and serve with sugar and cream in tall glasses filled with cracked ice. If you like it stronger, allow the strong hot coffee to cool and then chill in the refrigerator before pouring it into the ice-filled glasses.
Iced Coffee for After Dinner
Make strong coffee, at least twice regular strength, cool it, and then chill in the refrigerator. Put the chilled coffee and sugar to taste in a chilled cocktail shaker with cracked ice and shake well until foaming. Pour into either large wine glasses or small water goblets. This is delicious on a very hot night.
