The Tip
When taking butter or other spreads from a communal butter plate or dish, use the butter knife or spoon that accompanies the spread to take a portion and put it on your butter plate. Then use your own butter knife to spread the butter or spread on your bread, or other item it may be meant for.
The Recipes
Mmmmm waffles whether for breakfast, dessert, or a snack sound great this weekend! As Vermonters this is of course when we plug that Vermont maple syrup is one of the best toppings for these waffles (and it also makes for a great hosting gift.)
Emily Post’s Cookbook, 1951, pg. 349
Waffles
Makes 5 or 6 waffles
Ingredients
2 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 tbs. sugar
3 eggs
3 tbs. butter
1 1/4 cups milk
Directions
Sift flour, baking powder, sugar and salt together. Beat the eggs well and add the flour. Melt the butter and add it and the milk and beat until thoroughly mixed. Partly fill one side of a hot ungreased waffle iron, using about 1/3 of a cup of the batter. Close the iron and cook till no more steam comes out. Serve with butter at room temperature and heated maple sirup [syrup] on hot plates.

I love the quote and that photo! Emily made the goal of being kind cool! Dan reminds us often that learning the rules is the first step to knowing when to break them...
