Your etiquette tip, quote and an Emily Post Cookbook recipe to start your weekend off right!
The Tip
When escorting someone, they will be on your right (unless there is a good reason - like mobility to have them on your left. If you are ever asked to escort someone to their seat, either in an audience (like at a wedding) or during a formal dinner, you should offer them your right arm. During a dinner you might say, “May I escort [accompany, lead] you into dinner [to the table]?” For escorting someone to their seat in an audience you might say, “May I escort [show] you to your seat?”
The Recipes
Here is Emily’s second version of shirred eggs, Puffed Shirred Eggs, which she claims offers a very attractive presentation. We found it easier to understand this recipe having read the first version offered last week.

Puffed Shirred Eggs
These make a very attractive dish, and one that looks as if it had been made by a chef.
Time: 25 minutes
Serves: 1 or 2 eggs per person
Ingredients
Butter for greasing ramekins
1-2 egg whites per ramekin (serving) [SAVE THE YOLKS]
Scant 1/4 tsp. salt
A few grains [yes you read that right] of cayenne pepper
1-2 egg yolks
Four small cooked pork sausages
1/2 tsp. finely chopped shallots
a dash or two of Maggi sauce
OPTIONAL
2 or 3 tbs. Stewed Kidneys
2 or 3 tbs. Soft Cream Chicken Hash
Anything similar with a sauce will go nicely under the shirred egg(s)
Directions
Beat 1 or 2 egg whites with a scant 1/4 tsp. salt and a few grains cayenne for each egg white till stiff and put into a buttered ramekin. If 1 white is used, make a single hole in the center and carefully put the unbroken yolk into it. If 2 whites are used, make two holes and use both yolks. Bake in a 325℉. oven for 12 minutes or until the peaks of the whites are a golden brown.
Four small cooked pork sausages flavored with 1/2 tsp. finely chopped shallots and a dash or two of Maggi sauce placed under the beaten white (and the whole yolk) of 1 egg makes a substantial breakfast or first course luncheon dish.
A more delicious combination is to place 2 or 3 tbs. of Stewed Kidneys or Soft Cream Chicken Hash under the eggs. Almost anything with a sauce goes well with the otherwise rather dry beaten egg white.
