The Recipe
A family favorite pastime is clamming, and clam fritters are a great way to use up the bushel!

TIME: 25 minutes
SERVES: 4
Ingredients
1 pt. hard clams, opened
2 eggs, beaten slightly
¼ tsp. salt
dash pepper
¾ cup prepared pancake flour
Directions
Put clams through medium meat chopper. Mix beaten eggs with clams and gradually stir into the combined pancake flour, salt, and pepper.
Add more flour if necessary to make a rather thick pancake batter. Drop by spoonfuls in a pan lightly greased with bacon fat and fry on both sides.
