The Recipe
Lizzie is off to Martha’s Vineyard for summer vacation and we decided to do three New England seafood-themed recipes while she’s away.
New England Fish Hash
pg 52 of The Emily Post Cookbook, 1951
TIME: 25 minutes
SERVES: 4
Ingredients
1 cup cooked flaked fish
1 cup finely chopped cold boiled potatoes
1 small onion, minced
1/2 tsp. salt
1/4 tsp. pepper
1 egg, beaten
1 tbs. chopped parsley
2 tbs. salt pork or bacon fat
Directions
Mix ingredients in the order given [except the pork fat].
Have a skillet ready, heated, with 2 tbs. salt pork or bacon fat. Spread the mixture evenly and let brown without stirring. Fold over as for corned beef hash and serve on hot platter. Garnish with parsley.
