The Saturday Sip: January 28, 2023
Your inspirational etiquette tip, Emily Post quote and an Emily Post Cookbook recipe to start your weekend off right!
The Tip
Socially, introductions via text happen all the time, and it’s best when someone is making an introduction for you to thank the person who is connecting everyone and then mention that you’ll start a new text to handle details or whatever it is you were connected for. “Thanks Russel! Jarrod, it’s great to meet you, I’ll start a new text for us so we don’t blow up Jackson’s phone.” Just remember to actually start that next text thread.
The Recipe
Beef Stroganoff sounds mighty hearty on these cold New England days. Emily’s uses a different take on this classic by substituting the noodles [which Lizzie LOVES] with rice. Let’s see how it comes out!
Pg 77 Emily Post’s Cookbook, 1951 Please note, we retype the recipe as it is in Emily’s book and add notes in brackets when needed for clarity.
Beef Stroganoff
A simplified recipe that makes an excellent dish.
Time 20 Minutes
Serves 4
Ingredients
1 Cup Rice
1-1 1/2 lbs leftover rare steak (or fillet) cut in thin strips (cut across grain “on the bias”)
2 Tbsp Butter
4 Small onions, slice very fine
1 cup sour cream
1/2 lb sliced (cooked, fresh, or canned) mushrooms (may be omitted) [Here’s a link to an article on mushroom substitutes.]
4 tsp soya [soy] sauce
2 tsp paprika
1 tbs chili sauce or tomato catsup [ketchup]
salt and pepper
Directions
Boil rice, drain and keep hot.
Fry meat and onions for five minutes.
Add mushrooms [or substitutes,] sour cream, sauces, etc. [we think she means everything else] Stir until all is hot but not boiling.
Serve on rice.
