The Tip
When we are shopping, taking care to remember our greetings and goodbyes when we are at the register is still important. Acknowledging the employees who assist you shows respect and consideration for them.
The Recipe
On a winter day a hot bowl of soup is always comforting. Here is Emily’s Cream of Split Pea.

Cream of Split Pea Soup
Time: 1 hour
Serves: 4
Ingredients
1 medium onion, sliced fine
4 tbs. butter
3/4 cup split peas
3 cups of water or 1 cup of water and 2 cups of ham or other stock
1 bay leaf
2 tbs. chopped parsley
2 tsp. celery seeds
1 tsp. salt
1/8 tsp. pepper
1 cup cream
Directions
In an open pressure cooker, cook the onion in the butter till golden. Add the peas after washing and throwing out any misshapen or discolored ones. Add the water, or stock and water, and seasonings. Cover and cook 35 minutes at 15 lbs. pressure. Remove from fire and open when pressure has dropped. Stir peas well into a soft purée, adding a little water if necessary. Now add 1 cup of cream and heat to just under boiling, stirring continuously. If you have one, use a small electric portable mixer. Add seasoning to taste and serve with croutons. If for a party, add 2 tbs. whipped cream on top of soup in each cup.
