The Tip
When getting ready to travel with little kids, play-acting the experience can help make travel via train, plane, bus, or car a more familiar and fun experience. Set up an imaginary plane, train, bus, or car at home and walk youngsters through the experience.
The Recipe
Dan’s a big fan of hash, and we wanted to see if Emily’s New England Fish Hash holds up to his favorite corned beef hash.
Emily Post’s Cookbook, 1951, pg. 52 *Please note that recipes are copied as exactly as possible, including grammatical errors and inconsistencies.
New England Fish Hash
Time: 25 minutes
Serves: 4
Ingredients
1 cup cooked flaked fish
1 cup finely chopped cold boiled potatoes
1 small onion, minced
1/2 tsp. salt
1/4 tsp. pepper
1 egg, beaten
1tbs. chopped parsley
2 tbs. salt pork or bacon fat
Directions
Mix ingredients in the order given [except for the fat].
Have a skillet ready, heated, with 2 tbs. salt pork or bacon fat. Spread the mixture evenly and let brown without stirring. Fold over as for corned beef hash and serve on hot platter. Garnish with parsley.
