The Tip
This tip is one that we share with Elizabeth H. Cottrell author of Heartspoken, How to Write Notes That Connect, Comfort, Encourage, and Inspire.
When you take a moment to write a note, whether it is a thank-you note, a condolence note, or just a note to say, “Hi!” imagine that the person you are writing to is right there in front of you and think about what you would say to them in person. This is one of the easiest ways to break through note-writing writer’s block.
The Recipe
While we’ve been sad to read about Georgia’s peach crisis this year, peaches are one of our favorite summer treats and Emily’s recipe for Fried Peaches looked…well…peachy!
Emily Post’s Cookbook, 1951, pg. 304
Fried Peaches
Time: 25
Serves: 4
Ingredients
1 can peaches (halves) [4-6 fresh]
4 tbs. butter
4 tbs. brown sugar
4 slices of French toast or pound or other plane cake
2 1/2 oz. brandy
3/4 cup heavy cream whipped with 1 tbs. sugar and 1/2 tsp. vanilla
Directions
Melt butter in a heavy skillet which has a close-fitting cover. Fry the peaches in the butter till they are lightly browned. Sprinkle with the sugar, cover, and simmer for 10 minutes.
Place the peaches on the toast or cake. Pour the peach juice from the can into the skillet and mix with the melted butter and sugar. If there is too much liquid, boil off a little.
Add the brandy, stir and pour over the peaches, and put the whipped cream over all.
NOTE: These fried peaches may be served on plain or Angel Food Cake but are best on French toast. This is made by dipping sliced white bread into 1 egg beaten with 1/2 cup of milk and then sautéing in butter.`
