The Recipe
We’re whipping up some of Emily’s Griddle Cakes for a snowy Saturday here in Vermont. “Please, pass the Vermont maple syrup!”

Griddle Cakes
Makes: about 20 cakes
Ingredients
2 cups flour
3 tsp. baking powder
1/2 tsp. sugar
2 eggs
1 1/2 cups milk
1 tbs. melted butter
Directions
Sift flour, baking powder, salt, and sugar together in a mixing bowl. Beat the eggs and add them, the milk, and the butter to the flour mixture and beat until thoroughly mixed. Drop mixture on a lightly greased or ungreased hot griddle from the end of a tablespoon. When bubbles appear on the upper surface of a cake, turn that cake with a broad spatula and cook the other side.
Serve with butter at room temperature and heated maple sirup on hot plates.
