The Tip
Bad Days — It’s not all sunshine and rainbows. There are days when we have been hurt, when our tolerance or bandwidth is low when our hormones, sleep, or hunger have us not putting our best selves first and it’s important to remember that this is true for EVERYONE. No one will be perfect toward others every minute of every day. This is why self-reflection is such an important part of etiquette. Rather than use our knowledge of etiquette to judge others, we should be using it for self-reflection - and not just to beat ourselves up! But to help us remember that we do know the right way to treat others and that it’s okay to recognize when we have failed, and to take responsibility for it. “Anna, I’m really sorry for what I said yesterday. I was stressed and rather than take a minute to regroup, I judged how you chose to handle your kids. I’m really sorry for doing that to you.” “I wanted to start the call by apologizing. I realized I was very short with you in setting up this meeting and I didn’t intend to be so, I want you to know I appreciate you taking the time to meet with me today.”
The Recipes
A great egg dish for any weekend breakfast table! Add a bit more parsley and this could be green eggs and ham! (Sam I am.) Unlike other recipes, Emily makes recommendations with this one to pad out a full menu.
Emily Post’s Cookbook, 1951, pg. 272
Baked Parsley Ham and Eggs
Time: 20 minutes
Serves: 2
Ingredients
4 slices boiled ham (about 1/3 lb.)
3 tbs. butter (unsalted if possible)
4 eggs
2 tbs. chopped parsley
1 tbs. bread crumbs
1 tbs. grated Parmesan cheese
salt and pepper
Directions
An excellent breakfast dish.
Butter a Pyrex or other baking dish and then line with the ham slices. It is well to put 2 slices on each side of a [the] middle line of the dish to aid in serving. Break the eggs carefully so as not to break the yolks, 2 on each side of the dish. As the cheese, crumbs, and parsley will almost hide the eggs, it will help in serving this dish without breaking the yolks to know where they are. Sprinkle the parsley over the eggs and ham and then the bread crumbs, the cheese and the salt and pepper. Dot with the remaining 2 1/2 or so tbs. of butter.
Place in a 375℉. oven for 12 minutes or until the eggs have nearly set.
European-type bread is very good to help in eating every drop of the soft part of the eggs, [yolks :)] so deliciously combined with the flavor of the sweet butter, the parsley, and the touch of cheese.
NOTE: By using half of the quantities given in each of several ramekins, this dish is practical to serve a number of guests at luncheon.
