The Tip
An effective thank-you note keeps the focus on the thank you. While adding a few extra lines is nice if you’ve got the words, avoid turning your thank you into a thank-you note plus an apology or a thank-you note plus a mini newsletter. It will help keep your gratitude and the recipient as the focus.
The Recipe
Here’s one of Emily’s recipes that hails from WWII days when meat wasn’t always in the best supply.

Guinea Hen Hash
Time: 1 hour, 15 minutes
Serves: 2
Ingredients
1, 2 1/2 lb. guinea hen
Salt
Pepper
Orégano
Directions
During the war, there was a period when all the butchers in New York had to offer were some very tough guinea hens. Roasted they were practically uneatable, but they made a delicious hash.
Cook 1, 2½-lb. bird in a pressure cooker for 40 minutes. Remove all skin and bones-which is easily done after that much cooking. Run meat through meat chopper, adding salt, pepper and a little orégano.
Heat in 2 cups cream sauce in double boiler.
