The Tip
When accepting a tip, look the person giving it to you in the eyes (if you can) and say, “Thank you.” If you can’t make eye contact, look at the bridge of their nose or direct your face and attention to them.
The Recipe
Thinking of cold summer salads, Emily’s Sauce Verte will make many a summer lunch menu.

Sauce Verte
TIME: 20 minutes
SERVES: 4
Ingredients
1/4 cups mayonnaise
1 tsp. tarragon vinegar
1/2 tsp. chopped shallots
2 tsp. chopped watercress
2 tsp. chopped parsley
1/2 tsp. mixed English mustard
Directions
Mix all ingredients together in a cold mixing bowl and serve cold on cold pompano, salmon, crab meat, etc.
