The Tip
Regarding formal social invitations (not business or organizational ones), never ask your host if your invitation was a mistake. It causes far more harm than good, as it is often insulting to the host and questions the accuracy of their efforts. As a guest, it’s not your place to question your host’s choice of guest list. It’s your responsibility to reply. And you can reply yes or no as it pleases you.
The Recipe
We’ve been hit with a cold spring here in Vermont, and it’s got us thinking of warm dishes. Emily’s Chicken Cadwaller sounded like just the ticket!

Chicken Cadwaller
Time: 1 hour
Serves: 4
Ingredients
3-lb. frying chicken, cut up and skin removed
1/3 cup flour
1 tsp. salt
1/8 tsp. pepper
3 tbs. butter
2 tbs. olive oil
2 medium-sized white onions, thinly sliced
4 or 5 shallots, chopped
1 can condensed cream of tomato soup
1/2 cup of white wine (red wine may be substituted for white)
3 tbs. vinegar (half wine vinegar and half tarragon vinegar)
1 tsp. thyme
3/4 lb. mushrooms, sliced but not peeled
Directions
Mix flour, salt, and pepper and cover all surfaces of the pieces of chicken with it. then brown the chicken in the oil and butter.
Add onions and shallots and stir, cooking them about 3 minutes.
Add tomato soup, wine, vinegar, and thyme. Cover well and simmer 20 minutes.
Add mushrooms, cover again, and simmer 15 to 20 minutes more. Serve with rice or noodles.
